Information About New World Cheese
New World Cheese is all about helping people get into the habit of enjoying great cheese. Right now we offer cheese-centric catering and classes, and our retail shop and cheese lounge is coming soon — the only cheese shop in Denver strictly promoting the farmstead and artisan cheese renaissance underway in the Americas. Owner Teresa St. Peter first worked in a cheese retail in the early 1990s when there were less than two dozen producers of small batch specialty cheeses in the U.S. Today there are more than 800!
Denverites will soon be able to enjoy all that red, white and bleu cheesy goodness in a special place where they can meet real cheese makers, discover the places and critters contributing to the production of specific cheeses, and enjoy learning about the funky, fascinating science behind cheese making. And, of course, you’ll be able to buy delicious, unique and accessible cheeses to nosh on at home or in our lounge.
New World Cheese will host between 50-150 beautiful cheeses, plus fantastic charcuterie, cheese accompaniments, daily box lunches and a small selection of tools such as cheese boards, utensils and books. We will also offer catering options in the form of cheese trays, cheese appetizers and wedding cheese “cakes.”
You’ll also be able to relax and enjoy in our cheese lounge, which will have a sushi-style ordering menu to build your own cheese and charcuterie plate with your favorite accompaniments. Or, pick from the cheese-centric small plates menu or our daily sandwiches, soups and salads. We will emphasize beer pairings – Colorado is the Napa Valley of beer after all — but will also have several red, white and sparkling wine selections and non-alcoholic choices. On Sundays, put on your fancy pants (or hats) and enjoy our tea service including a delightful array of cheesy goodness, finger sandwiches, scones & pastries, tea & coffee.
In the back of the lounge you’ll find our tasting area where we’ll host all manner of cheese classes — from Cheese 101 and New World vs. Old World, to pairing and cooking with cheese. Many of these classes will feature a producer or partner such as a local brewery. And, if you are really wanting to impress your friends, we can come to your home to set up a tasting or full-fledged unique class. Come join us and Taste America’s Cheese Renaissance!
