At American Cheese Society (ACS) Jane is responsible for the Certified Cheese Professional® program. This professional certification program was established to encourage improved standards of comprehensive cheese knowledge and service, offering professionals in the cheese industry the opportunity to earn the distinguished title of ACS Certified Cheese Professional® (www.cheesesociety.org)

Jane’s responsibilities include continual education and professional development in the cheese industry. While her position sounds like it is only based in the Americas, her responsibilities include learning about cheese from all over the world. She has had the privilege to participate in many cheese education classes including studying in France for 3 weeks at Academie Opus Caseus (http://www.academie-mons.com/) where she learned hands-on artisan cheese production, aging, and marketing.

Jane has also had the opportunity to include trips to Roquefort and the Comte region in France to learn about the rich culture and history of cheese production in these protected regions. Last year she had the wonderful opportunity to attend Slow Cheese in Bra, Italy and participated in Master of Food Classes.
