Italian Pasta Class with Italian Tour Guide and Cooking Teacher, Dame Michele Morris

mam-lecce-cookingHave you always wanted to learn the secrets of pasta making from the Italians? Dame Michele Morris is a chef, cooking teacher, and award-winning cookbook author, but nothing brings her more joy than taking guests every year on a food and wine adventure to Italy. Michele’s ancestors came from Pascoso in northern Italy, and this year she will return to Rome and Puglia for her 8th organized trip. She and her guests will make handmade pasta every day for lunch and dinner, and when she returns, she will share what she has learned from her Italian colleagues and friends about making authentic Italian pasta dishes.

The first recipe will use egg-based pasta, a specialty of northern Tuscanyegg-pasta-dough-ravioli-3 and Umbria, but unheard of in the south of Italy, and we’ll use the dough to make ricotta and spinach stuffed ravioli that will be served with a sage brown butter sauce.

fettucine-alfredoMichele believes no trip to Italy is complete without a visit to Rome, and Rome just happens to be the birthplace of the original Fettuccine Alfredo. In fact, Michele visited Alfredo’s restaurant for her birthday one year, and will happily share the authentic recipe for the sauce. (Hint: it may not resemble any alfredo sauce you’ve ever been served in the US and it doesn’t contain any cream.)

For the final pasta, Michele will take us deep lecce-orecchiette-ainto southern Italy, to Puglia where she takes guests to a cooking school every year, and we will learn how to make the famous orecchiette pasta of the region, which is always dressed very simply with soft broccoli rabe and plenty of the best extra virgin olive oil. After we prepare the 3 dishes, everyone will be seated to enjoy lunch, featuring some of Michele’s favorite wines from the south.
