Dame Jane Bauer recently joined the LDEI Colorado Chapter and we are thrilled to have her as a new member! Jane works at the American Cheese Society (ACS) where she is responsible for the Certified Cheese Professional® program, which was established to encourage improved standards of comprehensive cheese knowledge and service, offering professionals in the cheese industry the opportunity to earn the distinguished title of ACS Certified Cheese Professional®. Jane’s responsibilities include continual education and professional development in the cheese industry, and take her all over the world to learn about cheese. She has participated in many cheese education classes including studying in France for 3 weeks at Academie Opus Caseus (www.academie-mons.com) where she learned hands-on artisan cheese production, aging, and marketing. She has also enjoyed trips to Roquefort and the Comte region in France to learn about the rich culture and history of cheese production in these protected regions, as well as a trip to attend Slow Cheese in Bra, Italy where she participated in the Master of Food Classes.
